Ingredients
Before we begin, let’s make sure we’re using only dog-safe ingredients for this cake…
1 cup of grated carrot or sweet potatoes
½ cup of rolled oats
1 cup of whole wheat flour
½ cup of dog-friendly, xylitol-free peanut butter (Always check the label! Some peanut butters contain artificial sweeteners like xylitol, which is toxic to dogs)
2 large eggs
For the icing: ½ cup of Greek yogurt
½ cup of unflavoured cream cheese
A handful of Terrier Truffles, or another Ruffintons treat, to decorate
Method
Preheat your oven to 180C degrees (160C degrees fan-assisted) or gas Mark 4
Stir together your rolled oats, wheat flour, peanut butter, and eggs in a large bowl
Mix together until a creamy consistency is formed
Fold in the carrots–or you can use sweet potato here if your pup prefers
Spoon your mixture into a greased cake tin
Bake for around 45 minutes until the mixture feels firm
Meanwhile, make your icing by mixing the cream cheese and yogurt
Spoon the icing over the cupcakes and decorate with your Terrier Truffles, miniature Canine Cupcakes or whatever works best for your breed and their appetite
Leave to cool before serving a slice as a tasty birthday treat
